A lot of people will ask what's the difference between a food allergy and a food sensitivity, and if you look at this as a spectrum, a food allergy is an immediate, life-threatening allergic reaction, and it causes this response in the body that can be very inflammatory, and cause some of the systems to shut down. A food sensitivity is just really just a delayed food allergic reaction, and sometimes that can manifest up to three days later. In that process the symptoms might be dark circles under the eyes, acne, chronic bronchial infections, ear infections. These kind of low lying inflammatory reactions, and so I think when you're really discussing food allergies and food sensitivities, it's really important to recognize that this is a spectrum and that a child or a person can fall anywhere on that spectrum.
